Rising Stars Apprenticeship
The 10 in 8 concept was borne in response to Alan Murchison’s ambition to build a financially sustainable collection of fine dining restaurants in the UK over an eight year period. Each restaurant would be individual, representing the highest standards the industry could offer and be capable of earning at least one Michelin Star within just 3 years of opening. Crucially however, the Group’s ambition is to develop the talent to run these restaurants from within the Group – we will not ‘buy’ our stars – we want to earn them and for us a ‘star’ is not just Michelin, it is the employees too.
We are searching for and selecting young talent to join us at the Academy to create an elite group of the industry’s future rising stars. The apprentices at the Academy are amongst great company and now part of a lineage that is proving to be legendary. Over the past 4 years, 10in8 has created two Michelin-starred chefs and has spawned the development of over 20 industry ‘stars’ who have gone on to join Michelin-starred restaurants around the world.
The Fine Dining Academy is your chance to be part of the future of the UK’s fine dining industry, one of the best in the world. By joining us you become one of a select few and take the first step towards what we hope will be a wonderfully exciting and successful career for you. An apprentice’s time at the Academy will be very rewarding. As an apprentice, you will join a team at one of our restaurants but before you do so, you will spend some time in our Head Office, understanding how the Group works and learning our culture, core morals and values.
An apprenticeship with 10in8 will include:
♦ Learning the basics of business management including administration, finance, marketing and operations.
♦Time in each section of the Kitchen irrespective of you joining the front of house team or the kitchens.
♦ Time in each restaurant so you can learn their different dynamics and get to know your colleagues in other locations.
♦ Time at the Academy’s cookery school, helping guests and learning how to operate in front of an audience.
♦ Time in Les Caveaux, learning about fine wines, whisky’s and coffees.
♦ Time with our Front of House teams learning service and customer awareness.
As a team member of the Academy, you join the 10in8 Group as an Apprentice and will enjoy all of the benefits that come with that accolade. The Academy’s Apprenticeship programme lasts for a minimum of 3 years during which time, you will have first-hand experience providing ‘service’ to our Guests. We are very proud of the Academy and of course, of the apprentices too. As such, we broadcast the programme to our Guests to make them aware of training intentions. During your Apprenticeship and when you are serving our Guests, you will wear the Academy’s ‘uniform’ and carry the ‘badge of honour’ which we ask you to do so with pride.
At the end of your three years the 10in8 Group will provide you with a very satisfying career and a chance to run your own restaurant from within the Group and fully supported by the Group. Whatever happens, we can assure you that by qualifying through the Fine Dining Academy the industry will recognize you as a ‘star’.
